Carlos is professional and very knowledgeable but also has a lovely way of delivering information on many subjects: he has endless interesting stories about local history, traditions, fauna, gastronomy and wine/sherry. He is attentive and answers all your questions with enthusiasm.The 12km hike was beautiful (Nature bliss! Endemic species.. Not one other person in sight!) and going through the only subtropical forest in mainland Europe. Carlos has a permit to drive to the start of the trail: it is otherwise a bit challenging to access. We finished the tour with a super tasty hearty lunch at Luisa’s home, the only resident in this area of the park – Think locally grown products, foraged food, authentic cuisine and a warm welcome! I enjoyed the day from start to finish and felt privileged for the experience as it would have been impossible to do this without Carlos’ expertise. I highly recommend booking any activity with Explore la Tierra!

Then an old bodega where we were shown around by the... read morewinemaker. We saw the flor and then drank several glasses of manzanilla direct from the barrels. It was a vertical tasting so starting with the 2 year old manzanilla and finishing with the 250 year old, from a padlocked barrel! It was so interesting and such a great way to see how the flavours develop as the manzanilla ages. Then off to a second bodega, where we drank more manzanilla and sherry alongside a delicious lunch amongst the barrels and then in the courtyard. It was a brilliant tasting where we met lots of lovely people and had some great manzanillas. Very highly recommended.

Highlights were the wild flowers which were in full bloom, a wild swim in amongst limestone boulders and lush ferns and lunch at the homestead of local cook and small farmer Maria Luisa. She was so hospitable that it was hard to walk afterwards.The walks can be varied according to fitness levels and so on.Unforgettable memories from this excursion.

Carlos must have talked for nearly 6 hours; he answered every question, and we learned so much! The tapas was wonderful, as always, in Vejer. We did a personalized sherry bodega tour that included two bodegas, one in Chiclana de... read morela Frontera and one in Jerez de la Frontera, as well as lunch and a tour of Jerez. We had a wonderful time! The bodega hosts were friendly and informative and enjoyed answering questions and telling us about their products. Carlos translated as our Spanish wasn’t fully up to the challenge. We had a lovely and upscale tapas lunch. Carlos was charming and helpful and is passionate about sherry and the region. We would recommend him very much!

Carlos took us on culinary experiences and taught us about the history of the authentic Spanish cuisine we got to taste. The quality of food was incredible.
